Chef Peter Merriman’s new concept brings Hawaii’s rich upcountry farming and ranching heritage to downtown Honolulu’s urban lifestyle. Moku Kitchen was one of the most anticipated participants in the Hawaii Food & Wine Festival’s Urban Luau, presented in the upcountry way of life that echoes a simpler time where food was locally-sourced and cooked over an open fire on the ranch.
Named after the Hawaiian word for “island”, Moku is a gathering spot where people seeking that authentic taste of Hawai’i can visit and unwind with either an ice-cold draft beer or a glass of wine, live music, and an amazing meal. The kitchen uses Maui onions, tomatoes from Hau‘ula, mushrooms from Hāmākua, greens from Waipoli Farms on Maui, pasture-raised beef from Hawai‘i Island and local goat cheese. And everything—from the ravioli pasta to the hamburger buns—is made from scratch in-house.
The restaurant boasts about 290 seats, including a stretch of outdoor seating, and a 46-foot-long bar made from mango wood with 36 beers on tap—served at 29 degrees Fahrenheit—and 12 biodynamic and sustainable wines. The setting is ideal for guests who desire a sampling of the local flavor of the thriving Hawai’i culinary scene.
