Baderbrau Brewery and Tap Room
Relatively easy to drink, more approachable beers are the highlight of the thriving craft brew movement in Chicago, and the owner of one of the newest breweries in town is keenly focused on high quality and, of course, a variety of flavors. Baderbrau, a 25,000-square-foot craft brewery, located near the South Side of Chicago, is the latest on the craft beer scene to open, but what is most attractive about this brewery is the local touch. As owner Rob Sama shared, “It’s a rebellion against homogeneity. It’s about getting off a place in a different city and not wanting to see all the same stuff you see back home. The brewery was founded to revive Chicagoland’s original craft beer, a Czech-style pilsner that was popular in the mid-nineties. The 175-seat taproom and adjoining retail bottle shop include the brewery and private-events space with seating for 50 guests. Not far from McCormick Place, Soldier Field and U.S. Cellular Field, the brewery serves up convention-goers and sports fans year round.
